Project 1- Infographic Poster

For this project we have to study a video, break down the preparation and the cooking process into a poster. We have to capture each Grandma’s personality and unique dish identity in our poster as part of the narrative structure.
The Grandma that I chose for this Project is named Angela from Genova who makes ravioli.

Breakdown
"Tuku" (braised whole piece of beef)
- Chop up carrot, onion and a stick of celery, strips the needles of a rosemary twig and blends then with the vegetables.
- Fries this mixture in olive oil with bay leaves and pine nuts
- Once the vegetables are soft, she adds in the beef.
- She mixes a tablespoon of tomato concentrate with a glass of red wine.
- Pours the mixture over the beef and lets the alcohol evaporate.
- Adds 3 cloves into the mixture
- Adds a jar of tomato Passata and leaves the beef to braise slowly (for at-least 3 hours)
Pasta dough
- She uses 500 grams of flour, 2 eggs and a pinch of salt. And around 130 ml of water (measured by eye).
- She kneads the dough until smooth and leaves the dough to rest, covered for 30 minutes.
Ravioli Filling
- She removed the mid-rib from the borage leaves
- She boils them in water with some escarole lettuce. They need to simmer for at-least 5 minutes.
- She fries some chopped onion and carrot in oil and butter with some rosemary.
- Crushes 2 bay leaves and adds them to the pan
- She uses a mixture of pork sausage and veal for the filling, by chopping and frying them with the vegetables.
- She drains the borage and escarole and squeezes them dry, before adding them to the meat.
- She minces half a clove of garlic and a table spoon of chopped marjoram.
- She then adds the meat mixture to the food processor, a little bit at a time, to form a paste.
- She beats 5 eggs and mixes this with a 100 grams of parmesan.
- She stirs this into the minced meat and seasons with a teaspoon of salt
- Adds breadcrumbs to stiffen the mixture
Assemble
- She rolls out the dough, makes long strips using machine.
- She uses a ravioli mould, but flouring the mould and lays half the dough over it.
- She fills each form with a tea spoon of filling
- Lays the other half of the dough over the filled mould, pats down dough to exclude the air
- Flour the mould and turn it over, and uses a pastry cutter to create the ravioli.
- Cooks the ravioli in boiling salted water and cooks for around 5 minutes and drains them thoroughly.
- She grates parmesan.
-The reduced braised beef creates the sauce.
-She dresses the cooked ravioli with sauce and plenty of parmesan.

Illustration
I started with illustrating each step in order by dividing each ingredient a tools in separate layers

After this i added the description of each step and added the necessary illustrations that represented the final outcome of the ravioli. I added took inspiration from Angela's apron and designed it on the plate as well
